


The 2013 Spring Festival is crammed full of artisans who work in food and drink. Throughout our long weekend, we’ll be shining the spotlight on producers, exhibitors, chefs and other creatives who work in the food industry. To go more in depth into specific subjects then we suggest you go along to the Olive Stage in the Inner Bailey at the times shown below. Here are just a few of the weekend's attractions:
You can look forward to a programme that will feature some of the stars of local culinary scene. The inimitable Will Holland, who dazzled on the BBC’s Great British Menu this spring, will provide a show-stopping demonstration in our prized headline slot on Saturday and Sunday.
Our programme features other delights too and you’ll be able to book in for workshops where you can learn more about the fine foods that are available in Ludlow and the Marches. Rest assured, we have something for everyone. Be prepared to be dazzled and delighted by our team of experts.
- Look out for Swift Bakery stand where they will be demonstrating the art of bread making. Visitors will be able to make their own dough, get their bread baked and then pick it up later in the day.
- Bacheldre Watermill will run their mini mill demonstration throughout the weekend, showing visitors how their ancient water mill makes such wonderful flour.

SATURDAY 11TH MAY
The Fish House, in Ludlow, will present a ‘Fish School’ demonstration for people who want to learn all that there is to know about piscine treats. The talented team from Ludlow’s premier fish emporium will be joined by other experts, who will provide essential knowledge. Learn the basics, from knife skills, right through to advanced recipes. Martyn Emsen, from Ludlow Smokehouse, and Tony Wilkes, of The Fish House, will talk you through it.
Multi-award-winning Ludlow cheesemaker Dudley Martin, from The Ludlow Food Centre, will educate you in Le Grand Fromage. Dudley has enjoyed a sensational year, helping the Food Centre to glory in the FARMA awards, when it was named the UK’s Best Farm Shop for 2013. He famously created the only authentic Shropshire Blue cheese and his talk will focus on the world’s smelliest cheeses. Join Dudley to smell, taste and judge. You’ll also learn how they are made, why they smell and why they taste great.
1.00pm - This Afternoon, with Marcus Bean
ITV This Morning star Marcus Bean can enjoy a long, leisurely lie-in this year – we’ve scheduled him for an afternoon slot on our Talks and Demos stage. The celebrity chef, who also stars on Channel 4’s What’s Cooking, will show why he’s become a national favourite. Marcus is also the owner of Brompton Cookery School, in Shrewsbury, where he regularly provides demonstrations. He is also the chef patron of the New Inn, at Baschurch, where he cooks each day.
Master baker Robert Swift will give you a hands-on demonstration of how to make perfect bread. Richard has successful relocated to larger premises in Ludlow’s Corve Street in recent times and is proof positive of how small businesses can thrive. His flour-to-dough session will provide you with take-home-and-use tips on how to get excellent results every time. Attendees will have the chance to taste the results, by collecting freshly-baked bread afterwards.
3.00pm - Will’s Great British Menu
The prodigiously-talented Will Holland rose through the ranks like a supernova when he became one of the youngest ever chefs to attain a Michelin star. The head chef from Ludlow’s La Becasse is a regular on the nation’s TV screens and attracts customers from around the UK to his restaurant. He’ll put his unique slant on how to use beer, bangers and bread in a thrilling, informative and entertaining demonstration.
4pm – Let Me Entertain You
Birmingham-born Anthony Doyle will provide a toe-tapping finale to Saturday’s talks and demonstrations stage. He’ll thrill you with pop, folk and rock during an energetic set.
SUNDAY 12th MAY
11.00am Cooking Like Cleopatra
Join Marina Ibrahim from "Cooking like Cleopatra" and learn how to prepare some of the most popular authentic Egyptian dishes as vegetarian Mezze: Ful Medames, Shak Shuka and Baba Ghanough. "Egyptians cook with passion and are renowned for their hospitality. I would like to share some of my favourite recipes as passed down to me from my aunt Moneira's my aunt Moneira's kitchen in Nag Hammadi north of Luxor. Ma' Asalaama – See you there!" 12.00noon - A Black Country Classic
A pint with pork scratchings ... oh and chocolate! Daniel will be creating a dessert based on a classic pub snack. Hobsons beer mousse topped with cream served with pork scratching chocolates which are a real treat! This is a must see demo from an amazing chocolatier.
Dean Banner, chef and patron of his family run restaurant, Parkway will be cooking with Ox Cheek. He will be treating this as a finer cut of meat NOT as Offal which its sadly classed as. Come along and discover the potential of cheaper cuts of meat.
Felice Tocchini from Fusion Brasserie will be joining us from his Italian restaurant, The Fusion Brasserie, in Stoulton, Worcestershire. Come along and learn how to add a little ‘Italian Magic’ to your cooking.

With the pate trail on the Saturday and the pudding trail on the Sunday this is a tasty opportunity to explore Ludlow.
The Graeme Kidd Bursary is available for young people aged 16 - 25 who want to pursue a carrer in the food industry.
